Body is the tactile weight of a coffee on the palate — a physical sensation of viscosity rather than a flavor. It runs from thin and tea-like (think skim milk) to heavy and syrupy (think cream), and comes largely from dissolved solids, oils and suspended particles pulled out of the grounds.
Etymology
Cuppers borrowed the term from wine tasting, where 'body' had described the mouth-filling weight of a liquid for centuries; it entered coffee vocabulary along with the specialty trade's cupping forms in the mid-20th century.
In use
A taster might write 'medium body, juicy and tea-like' to place a coffee's weight on the cupping form's 6-to-10 scale.
