Finish is what stays with you after swallowing — which flavors linger, how intense they are, and how cleanly they fade. A long, sweet, coherent finish points to sound, ripe beans; a short, drying or papery one usually betrays defects, stale stock or over-extraction.
Etymology
Another borrowing from wine, where 'finish' has long described an aftertaste's length. The SCA cupping form records the same idea under the heading 'Aftertaste'.
In use
Cuppers say a coffee 'finishes long' or 'drops off quickly', and mark the aftertaste category on a 6-to-10 scale.
