Brewing Methods

Definition

A manual brewing method in which hot water is poured in controlled stages over a bed of ground coffee held in a paper or metal filter cone, with gravity drawing the water down through the grounds. Because the brewer adjusts flow rate, pour pattern, and timing by hand, pour over rewards steady technique and can push a single coffee toward either clarity or body.

Etymology

The name simply describes the act: water is poured over the coffee rather than steeped with it or forced through under pressure. Melitta Bentz's 1908 paper-filter cone turned the technique into a household routine, and specialty cafés revived the term in the 2000s to set single-cup brewing apart from batch brewers.

In use

A barista says a coffee is brewed as pour over to signal a made-to-order single cup rather than a batch or an espresso.
