The pair of cutting discs inside a grinder — one fixed, one rotating — that shear and crush coffee beans into grounds. Their material, cutting geometry and alignment determine how tightly the particle sizes cluster, which is the single strongest influence on how evenly a coffee extracts.
Etymology
From burr, the raised cutting edge left on metal. The word predates coffee and was borrowed from milling and metalwork.
