Milk DrinksDefinition
A Spanish espresso drink made with roughly equal parts espresso and warm milk, usually 1:1 and served in a 4-5 oz glass. The milk is barely textured, so there is little or no foam layer and the acidity of the espresso remains perceptible.
Etymology
From Spanish cortar, to cut: the splash of milk cuts the sharpness of the espresso. It is closely related to the gibraltar, the name used by Blue Bottle for the same drink served in a Libbey glass.
In use
A common order for drinkers who find straight espresso too harsh but a latte too milky; in Spain it is often drunk quickly standing at the bar.
