EspressoDefinition
An espresso pulled with roughly twice the water of a normale, usually about 50-60 ml from the same dose, giving a milder but more bitter cup. The longer contact between water and grounds extracts more caffeine and bitter compounds, so concentration drops while bitterness rises.
Etymology
Italian for "long," from Latin longus, deliberately contrasted with ristretto ("restricted, short") in espresso terminology.
In use
Used on menus to signal a longer pour, or spoken to ask a barista to run the shot past its usual volume.
