Espresso

Definition

A deliberately shortened espresso pulled with less water than a normale, typically 15-20 ml from the same dose of coffee. The brief yield captures the early, sweeter and more acidic compounds while cutting off the bitter tail end of the extraction.

Etymology

Italian for "restricted" or "narrowed," the past participle of restringere (to tighten), chosen to describe the intentionally reduced pour.

In use

Ordered when someone wants a denser, less bitter shot, or poured as the base of a cortado so the milk does not dilute it into weakness.
