An instrument for reading the temperature of brewing water, milk or the coffee slurry itself. A few degrees shift how readily solubles leave the grounds, so a probe that reads quickly and settles on a stable number is more useful than a slow dial with a wide needle swing.
Etymology
From Greek thermos (hot) and metron (measure). Kitchen probe thermometers moved into coffee and tea use as brewing became more measured.
In use
Checked before pouring: most filter recipes sit between 88 and 96 °C, with darker roasts and delicate green teas at the lower end.
